Amazake

Amazake is a sweet fermented rice food of Japanese origin, which is eaten as a dessert or enjoyed as a drink. Whole rice is cultured with the fungus Aspergillus oryzae. The texture is between a soft pulp and a cream. Amazake is slightly alcoholic. It is available from Health Food stores as a long-life product in glass jars.
