Rejuvelac
Rejuvelac is a fermented liquid made from sprouted grains. It can be drunk as a live-culture drink to aid digestion or used to ferment other foods. It is most often made from soft wheat berries but can also be made from other grains such as buckwheat. Rejuvelac is lemony and sharp in flavour with a slightly earthy smell. The colour is a cloudy pale yellow. Rejuvelac can be used to culture soya milk into soya yoghurt. Other uses as a starter culture include the making of fermented nut cheese.
