Tofu
Tofu, also known as Bean Curd is a protein curd made from coagulated plant milk, most usually soya. Tofu is available in many forms, including grades of silken tofu where the curds are not pressed, firm tofu where the water is pressed out, dried tofu and fermented tofu. Tofu is also available naturally smoked, which produces a firm meaty curd. The choice of coagulating agent, usually nigari (magnesium chloride) or gypsum (calcium sulfate dihydrate) influences the style of tofu.
