Yuba
Yuba is otherwise known as tofu skin or bean curd sheets. The connection with tofu is misleading as both the production and the finished product are very different. Yuba is a protein food made by lifting off the film formed on top of heated soya milk. It can be eaten fresh, or dried for further processing. It is sold dried or semi-dried in sheet form, bunched and dried into sticks, or braised and canned.
